Dining at Sea:
The World's Most Luxurious Floating Restaurants

Michelin-starred culinary talent, exceptional wines, spectacular dining rooms and some of the world's finest hospitality. A new generation of luxury cruise ships is bringing the great restaurants of Europe and New York to the open ocean.

There was a time when cruise ship dining was associated primarily with enormous buffets, midnight snacks and formal dinners served to hundreds of passengers at once. Those traditions have not entirely disappeared, but the very finest cruise ships have taken a decidedly different direction.

On today's most exclusive vessels, passengers can experience sophisticated tasting menus, personally selected wines, beautifully presented seafood, handmade pasta, premium steaks and menus designed in collaboration with some of the world's most celebrated chefs. The setting might be an elegant dining room reminiscent of a Parisian hotel, an intimate sushi counter or a quiet terrace overlooking the Mediterranean.

The emphasis is increasingly on quality rather than quantity. Smaller dining rooms, attentive service, carefully selected ingredients and personalized hospitality create experiences that can rival excellent restaurants on land. For travelers who appreciate outstanding cuisine, the ship itself has become a destination.

The Ritz-Carlton: The Private Yacht Approach to Fine Dining

Few luxury hotel brands are as closely associated with refined service as The Ritz-Carlton. Its entrance into the yachting world brought that reputation to the sea, with beautifully appointed superyachts, intimate restaurants and culinary experiences shaped by internationally renowned chefs.

The collection includes Evrima, Ilma and Luminara. Each offers dining experiences that reflect the destinations visited, with an emphasis on exceptional ingredients and sophisticated but comfortable surroundings.

On Evrima, one of the most exclusive experiences is S.E.A., developed in collaboration with Chef Sven Elverfeld, whose restaurant Aqua at The Ritz-Carlton in Wolfsburg, Germany, has earned three Michelin stars. The intimate venue features a contemporary European tasting menu with thoughtfully chosen wine pairings.

Aboard Ilma, guests can dine at Seta su Ilma, developed by acclaimed Italian chef Fabio Trabocchi, whose restaurant portfolio includes Washington, D.C.'s Michelin-starred Fiola.

Trabocchi's cuisine draws on the Italian coastline, seasonal produce, handmade pasta and carefully prepared seafood. The menu emphasizes modern interpretations of Italian traditions, with wines selected to complement the courses.

At the yacht's Beach House, celebrated American chef Michael Mina has helped create a more relaxed but equally appealing culinary concept, featuring Pan-Latin and Caribbean flavors, seafood, ceviche and dishes influenced by Central and South America.

Luminara also offers an Italian specialty dining experience developed with Fabio Trabocchi. Across the collection, passengers can choose between elaborate multicourse dining, Asian cuisine, Mediterranean seafood and outdoor restaurants where the ocean provides the scenery.

The yachts' wine program is particularly attractive to enthusiasts. Fine wines and other premium beverages are included in the fare, while a private reserve list of more than 120 selections offers additional opportunities for collectors and connoisseurs. Sommeliers can assist with pairings and special occasions.

Most restaurants are included in the yacht fare, although the exclusive chef-designed tasting venues such as S.E.A. and Seta carry an additional charge.

At its best, yacht dining combines the personal attention of a private club with the sophistication of a great European restaurant—and the scenery changes every evening.

Explora Journeys approaches ocean travel with the atmosphere of a contemporary European luxury hotel. Its ships feature spacious public areas, beautiful lounges and a variety of dining establishments designed to appeal to passengers who take their food seriously.

One of the standouts is Anthology, an Italian fine-dining restaurant created by the company's Head of Culinary, Franck Garanger. Having worked alongside celebrated culinary figures including Paul Bocuse and Alain Passard, Garanger brings considerable experience to the project.

Anthology's multicourse tasting experience travels through Italy's regional cooking traditions. Depending on the menu, guests may encounter caviar and lobster, delicate seafood preparations, carefully crafted pasta, exceptional beef and creative desserts inspired by the Italian countryside.

The restaurant's contemporary design, sophisticated service and option for outdoor dining make it particularly appealing for a romantic dinner or special celebration.

Wine is treated with similar care. Explora's beverage programs offer thoughtfully selected Old World and New World wines, along with specialist guidance and premium selections available at an additional cost. Anthology also offers a wine-pairing experience designed around its tasting menu.

Other dining options include Sakura for Pan-Asian cuisine, Marble & Co. Grill for premium meat selections, Fil Rouge for French-inspired cooking and Med Yacht Club for Mediterranean favorites.

Silversea has developed a loyal following among travelers who enjoy luxury accommodations, personalized service and a serious appreciation for fine dining.

On ships such as Silver Nova and Silver Ray, passengers can select from several elegant dining venues, each offering a distinct style of cuisine.

Silversea also places particular emphasis on the relationship between food and the destinations its ships visit.

The program also includes cooking demonstrations, culinary excursions and opportunities to learn about local food and wine traditions. On certain vessels, the S.A.L.T. Chef's Table offers an intimate, multicourse dinner featuring modern interpretations of regional specialties.

Wine lovers will appreciate Silversea's interest in regional pairings. S.A.L.T. Kitchen features an extensive collection of regional wines on applicable ships, while special voyages may include tastings led by the head sommelier and opportunities to explore distinguished wine regions.

Seabourn has long appealed to travelers who prefer understated elegance, smaller ships and attentive service. Its dining program emphasizes fresh ingredients, international influences and a relaxed approach to luxury.

The line's Mediterranean restaurant, Solis, was developed with Master Chef Anton Egger and Senior Corporate Chef Franck Salein.

The menu draws inspiration from the coastal cooking of Italy, Greece, Spain and other Mediterranean destinations, featuring seafood, seasonal vegetables, olive oil and carefully prepared regional specialties.

One of Seabourn's particularly attractive features is its inclusive dining approach. Guests can enjoy its restaurants without an additional dining charge, and complimentary fine wines are served with lunch and dinner.

The Restaurant provides a more traditional fine-dining setting, while Earth & Ocean offers creative dishes in a relaxed outdoor atmosphere. Sushi and in-suite dining round out the experience.

For passengers who appreciate variety without a rigid schedule, Seabourn's combination of cuisine, comfort and flexibility has considerable appeal.

For the Wine Connoisseur

Beyond the House Wine: Exceptional Bottles on the Ocean

A truly great dinner deserves an equally impressive wine. On the finest luxury vessels, the beverage program is no longer an afterthought. Sommeliers, reserve lists and specialized wine experiences are increasingly important parts of the voyage.

Guests may explore celebrated wine regions such as Bordeaux, Burgundy, Champagne, Tuscany, Piedmont and Napa Valley, depending on the ship's current selections.

A well-chosen white Burgundy might accompany butter-poached lobster, while a fine Barolo could complement truffles, aged cheese or a rich meat course. Vintage Champagne can make a fitting introduction to a special evening.

The difference between a pleasant wine program and an exceptional one often comes down to service. Knowledgeable sommeliers understand the pairing, the producer, the vintage, proper serving temperature and the preferences of the individual guest.

There is also the question of value. Some luxury lines include a generous selection of fine wines in the voyage fare, while rare vintages, private tastings and exceptional bottles may carry an additional charge. Serious collectors should request the reserve list before sailing.

Behind the Galley Doors

How Are Executive Chefs Selected for Luxury Cruise Ships?

A beautiful dining room and an impressive celebrity chef's name may attract guests, but the real responsibility for executing hundreds of excellent meals rests with the ship's onboard culinary leadership.

Luxury cruise lines generally look for accomplished chefs with substantial backgrounds in high-end hotels, respected restaurants or other demanding hospitality operations.

Culinary training, references, management experience and the ability to lead an international kitchen team are especially important.

Depending on the cruise line and position, the selection process may include detailed professional interviews, reference checks and assessments of culinary and operational skills. A candidate must demonstrate more than the ability to prepare one outstanding dish. The challenge is maintaining consistent quality across multiple dining venues, meal periods and passenger preferences.

Candidates also need experience with food safety, allergen management, inventory control and the practical realities of provisioning a vessel visiting different countries. Shipboard kitchens must comply with applicable maritime public-health requirements, including sanitation practices reviewed by authorities such as the United States Centers for Disease Control and Prevention's Vessel Sanitation Program.

Perhaps the greatest test is consistency. An executive chef must be able to supervise an entire culinary brigade, maintain excellent standards through a lengthy voyage and respond to the changing availability of ingredients as the ship travels from port to port.

The famous chefs who develop signature onboard restaurants often serve in creative or consulting roles rather than personally preparing every dinner. It is the vessel's executive chef, chefs de cuisine, pastry chefs, sous-chefs and supporting teams who bring those recipes to the table each evening.

Preparing one exceptional dinner is an art. Delivering exceptional dinners every evening, across several restaurants, while traveling thousands of miles at sea requires an entirely different level of discipline.
The PLAYHORSE Perspective

The World's Finest Restaurant May Be Moving

The appeal of dining aboard an extraordinary cruise ship goes beyond the menu. It is the combination of great cuisine, memorable service, beautiful surroundings and the pleasure of being somewhere entirely different.

Imagine enjoying Champagne as the French Riviera disappears into the distance, ordering fresh Mediterranean seafood after an afternoon ashore, or sitting down to a leisurely dinner while the Caribbean sunset turns the horizon golden.

For travelers who appreciate exceptional restaurants, interesting people, fine wines and luxury without unnecessary formality, today's finest ships offer an experience unlike almost anything on land. The table is beautifully set. The wine is poured. And the view is always changing.
